Les's Meat Loaf

                                       GLAZE
                 1/2                c  ketchup
                 4               tbsp  brown sugar
                 4               tbsp  cider vinegar

                                       MEAT LOAF
                 1                tsp  oil
                 1                med  onion -- chopped
                 2             cloves  garlic -- minced
                 2                     eggs
                 1/2              tsp  thyme
                 1                tsp  salt
                 1/2              tsp  ground black pepper
                 2                tsp  dijon mustard
                 2                tsp  worcestershire sauce
                 1/4              tsp  tabasco sauce
                 1/2                c  lowfat 1% milk
                 1                 lb  ground beef, 4% fat
                 1                 lb  ground pork -- lean
                 2/3                c  nonfat saltine crackers

               Mix glaze ingredients in a small saucepan and set aside.

               Heat oven to 350 degrees, heat oil in medium skillet add onion and garlic
               and 1 tbsp water.  Saute until softened, about 5 minutes.

               Mix eggs, thyme, salt, pepper, mustard, pepper sauce, and milk.  Add egg
               mixture to meat in a large bowl along with crackers, parsley, and cooked
               onions & garlic.  Mix until meat mixture does not stick to the bowl.  If
               mixture sticks, add more milk.  With wet hands form meat mixture into the
               loaf pan.  Pull mixture away from the pan sides to keep the glaze from
               dripping into the oven.

               Brush the loaf with 1/4 of the glaze and bake for about 45 minutes.  The
               glaze should be set.  Brush with another 1/4 of the glaze and continue to
               bake until loaf registers 160 degrees, about 15 minutes longer.  Remove
               from the oven and allow to cool for 20 minutes.  The remaining glaze can
               be simmered and served with a slice of meat loaf.
