Mexican Casserole

1 lb 4% fat, ground beef
1 can corn -- drained
1 can ranch-style beans
1 can green chiles
1 can tomatoes -- drained and chopped
1 onion -- chopped
1 can Cream of Mushroom, 98% Fat Free
1 can Olives, canned 2.25 oz -- small
2 cups tortilla chips, Trader Joe's -- broken
salt and pepper -- to taste
chili powder -- to taste
Brown hamburger meat and onions. In a large pot add the meat, onions and
all other ingredients EXCEPT tortilla chips. Simmer for 45 mins. over
med-low heat. Add tortilla chips and simmer 15 more mins. Serve with
tortilla chips.
Also, this can be done in a crock pot. Brown meat first, add all
ingredients and leave on low "all day".
Made this on 11/12/01, a nice comfort food.
