Oniony Meatloaf

6 yellow onions
2 tbsp oil
3 lb ground beef, 4% fat
1 c bread crumbs
1 tsp dried parsley
1 1/2 tsp salt
1 tsp pepper
1/2 tsp thyme
1/2 tsp marjoram
3 eggs
1 c milk, 1% lowfat
Fry onions over a medium heat in oil, stirring from time-to-time, until
they turn so dark brown that they are almost burned. This caramelizes the
onions and gives the meat loaf its distinctive flavor. When the onions
are done, drain on paper towels and allow to cool to touch
While the onions are cooking, put the meat in a large bowl. Add the dry
ingredients. Beat the eggs with the milk and pour over the meat and dry
ingredients. With both hands thoroughly mix all ingredients. Add the
cooled onions and mix thoroughly again.
Transfer mixture to a medium-sized shallow oven-proof dish and shape into
a loaf. Pour over the loaf enough hot tap water to come one-third of the
way up the sides of the loaf. Smooth the top of loaf with our hands and
bake at 350 degrees for 2 hours.
