Mini White Castles

1 package hot dog buns -- cut in 3rds
1 pound 4% fat, ground beef
1 onion -- diced
I buy the square dinner rolls (one dozen in a package), slice them in
half, set aside. Roll out 1 pound (yes, one pound makes 12 burgers) the
best quality ground beef into a rectangle between two sheets of wax paper,
to about 1/4" thick. Cut the meat into 3" squares, take a dowel, or a
clean pencil and poke about 5 holes in the center of each patty. Set
aside.. Finely dice one large white onion , set aside. In the largest
skillet you have , a square griddle is best..., place a light, but
complete covering of vegetable oil in the pay. Then, completely cover with
a layer of onion....salt and pepper the onion, then sauté it until it
becomes translucent, place your patties on top of the onions, let cook
until meet turns grey-brown, no need to turn the burger (remember the
holes, that's what keeps them moist) place the top of the bun, cut side
down on top of the patty, and place the bottom half, cut-side down on the
top of the top half. Let cook for about one minute...your White Castle is
done! Now with a spatula, place the spatula under the burger being sure to
pick up some of the onion, lift the burger up removing the bottom half of
the bun off the top, turning it, and placing it under the burger. Clever
huh...and they said I had a misspent youth. LOL To complete this sumptuous
repast, mix ketchup and mustard together, slice some dill pickles, very
thin...lift the lid of your burger and dress it to taste. That my friend
is a White Castle, and don't let anyone tell you differently...'cause it

NOTES : I made these on 4/7/8. They are real good. Next time I
will put a little piece of American Cheese on them.
