Creamy Tomato Soup

                 1/2           medium  onion -- finely chopped
                 1         tablespoon  olive oil
                 1                can  Rotel diced tomatoes & green peppers
                 1                can  tomato soup, condensed
                 1                cup  2% low-fat milk
                 1/2         teaspoon  dried basil
                 1/8         teaspoon  garlic powder
                 4             ounces  chevre cheese

               In a saucepan, saute onion and oil until onion is soft. Put tomatoes in
               food processor and zap a few times to make dice very small.  Stir Rotel,
               soup, milk, basil, and garlic into onions. Bring to a boil. Reduce heat,
               cover and simmer for 10-minutes. Stir in cheese until melted. Serve
               immediately.

               NOTES : I started with a different recipe and made changes until I
                       found what I like. I think this is it. It is really good.
