Tomato Tart

1 pizza crust -- refrigerated
4 plum tomatoes
1 tablespoon kosher salt
6 ounces mozzarella cheese -- shredded
4 ounces feta cheese
1/4 cup onion -- minced
1 clove garlic -- minced
1 tablespoon dry herbs -- parsley, basil, oregano, thyme,
rosemary…
1 tablespoon olive oil
Pat crust into greased 9x13 pan and bake according to directions on can.
Meanwhile: Slice 4 plum tomatoes and sprinkle 1 tbsp kosher salt over them
and cover with paper towel. Allow to stand 20 minutes. Mix dry herbs:
parsley, basil, oregano, thyme, rosemary, etc.
1. Cover baked crust with mozzarella and feta cheeses.
2. Sprinkle onion and garlic over top of cheeses.
3. Arrange tomatoes over above.
4. Sprinkle herbs over top of tomatoes and drizzle this with oil.
Return to oven for 15 minutes or until cheese is melted.

NOTES : 3/28/05 - Made this tonight. It was great. Les & I ate the whole
thing. I couldn't find Pizza Crust, so I used refrigerated Crescents. The
plum tomatoes here are just a little larger than cherry tomatoes, so I used
our normal tomatoes -- those that come on the vine. But I peeled them. My
Feta Cheese had garlic and herbs, so I omitted the garlic, but I still added
the suggested herbs, maybe not one tablespoon. When the cheese had melted,
it still seemed like something was missing, so I sprinkled it with freshly
grated Parmesan Cheese and put it back in the oven for 5-min. This is a real
keeper. Les suggested that it would be good with sausage, ground beef or
dried salami between the cheese and tomatoes.
