Broccoli Casserole

                 Amount  Measure       Ingredient -- Preparation Method

                 3           packages  frozen broccoli flowerets -- chopped
                 1                cup  mayonnaise
                 1                cup  cheddar cheese -- grated
                 2                     eggs
                 1                can  Cream of Mushroom, 98% Fat Free
                 1                     onion -- chopped fine
                 1           teaspoon  salt
                                       bread crumbs
                                       butter

               Cook broccoli according to package directions, drain, squeeze out excess
               water.  Mix together all ingredients, except bread crumbs and butter.
               Pour into greased casserole, sprinkle top with bread crumbs, covering the
               entire top, dot with butter.

               Bake at 350 degrees for 45 minutes.

               NOTES : Try making this with 1 cup of pecans.  Saw it on TOH by
                       JeFrend_VA.  This is a dish that I always fix for family
                       dinners.  Nice to try it with a different twist!!

                       Made this Christmas 2002.  Did not chop the flowerets,
                       used pearl onions and added pecans.  Was still a wonderful
                       dish, and nice that it was a little different.

                         LH – I read a recipe that used crushed Ritz crackers instead of
                         breadcrumbs.. I would try it!
