Artichoke-Cheese Frittata

                 Amount  Measure       Ingredient -- Preparation Method

                 1              clove  garlic
                 3             stalks  green onions -- chopped
                 2               jars  artichoke hearts -- marinated in oil
                 4                     eggs
                 1/2               lb  sharp cheddar cheese -- grated
                 1/4              tsp  salt
                 1               dash  pepper
                 1               dash  Tabasco sauce
                 12                    crackers -- crushed

               Saute garlic and onion in oil drained from 1 jar of artichoke hearts.
               Beat eggs and add the rest of the ingredients with a fork.  Chop
               artichokes and add.  Add onion & garlic mixture, plus 1/2 of oil from
               second jar of artichokes.  Pour into an 8 x 8 or 8 x 10 pan.  Bake 35 to
               40 minutes in 350 degree oven.  Let stand 5 minutes, cut into squares.

               Serve warm or cool.
