Blackeye Pea/Jalapeno Dip

1/2 bell pepper
2 sticks celery
2 jalapenos -- seeded & chopped
1 large onion
1 teaspoon black pepper
2 Tablespoons tabasco sauce
1/2 cup tomato sauce
3 chicken bouillon cubes
2 cans black-eyed peas
6 ounces tomato paste
1 teaspoon garlic powder
2 tsp sugar
Chop bell pepper, celery, jalapenos, and onion finely into a large pan.
Add black pepper, Tabasco, tomato sauce, and bouillon cubes. Bring to a
slow simmer. Add blackeye peas, tomato paste, garlic powder, and sugar.
Cook at a simmer 30 minutes. Serve hot with "dippers"--tortilla chips,
corn chips, veggies, or breads.
This is VERY hot if made exactly to recipe. Use less jalapenos if it is
too hot, but we like it this way. It is a great way to get people to eat
the blackeye peas at New Year. We always have a party and someone always
brings this. There is rarely any left to take home. Some brave souls even
eat it like chili--by the bowlful.
