Don Don Noodles

1 pkg chinese noodles
BROTH:
1 c nonfat chicken broth
1 tbsp soy sauce
1 tsp sesame oil
SAUCE:
1/3 c nonfat chicken broth
1/3 c scallions -- chopped
2 tbsp sesame paste
3 tbsp chunky peanut butter
2 tsp sugar
1 tsp salt
2 tsp soy sauce, low sodium
2 tsp chili paste with garlic
4 tsp dry sherry
4 tsp sesame oil
GARNISH:
1/2 c chopped peanuts
1/3 c scallions -- sliced
Put the water for noodles on to boil. Mix the ingredients for broth in a
small pan, bring to a boil and set aside after it has boiled. Mix the
ingredients for sauce in a 4-cup glass mixing cup. Because of the sesame
paste, this will not always mix easily, but mix until it is smooth. Set
aside. When water is boiling cook noodles according to directions. Try
not to overcook them. Drain noodles, place in a bowl and add the boiled
broth. Add the peanut sauce and start to mix. It will be soupy, but mix
every 5 minutes until the liquid is absorbed. Garnish with scallions and
peanuts.
These may be served hot or cold. When made ahead, refrigerate them and
bring them to room temperature before serving.
