A slightly different version by AvidcookGA:
I found a recipe for faux mashed potatoes. I used the leftovers for hash
browns the next morning.
Steam one head of cauliflower until very soft and tender. Add a splash of
heavy cream, 3/4 cup sour cream salt & pepper to taste. Mix with a mixer
until you reach a mashed potato consistency. Refrigerate leftovers.
Next morning, add 1 large egg, 2 tablespoons grated parmesan cheese, 1/2
of chopped onion, 1/2 chopped green pepper and salt and pepper to taste,
to the left over faux mixture. Form into patties, dredge in grated
parmesan cheese and pan fry in melted butter until browned.

NOTES : Made this on 7/31/03. What a surprise! We really liked
it. A different way to serve Cauliflower. We didn't have
any left over to try the patties.
