Szechuan Green Beans

1 lb green beans
6 garlic cloves -- peeled
2 ginger root slices -- quarter sized
2 scallions -- chopped
1 tbsp vegetable oil
1 tsp red pepper flakes
1 tbsp soy sauce, low sodium
1 tbsp rice wine vinegar
Remove strings and tips from green beans, break into 2" pieces.
Peel garlic and ginger, chop onions. Place into food processor and
process until finely chopped. Remove to small bowl, add oil and pepper
flakes. Cook in microwave, uncovered, at 100% for 3 minutes. Remove from
microwave, stir in soy sauce and rice wine vinegar. Pour over green beans
and toss gently to coat.
Cook, uncovered, at 100% for 10 to 15 minutes, stirring 4-5 times.
Serve hot or cold.
