Leave the dough to double its volume (depending on the piece, it may take 1 or two
hours).
Put the dough in a bowl covered with cling film in the fridge, if it is not going to be
used on the same day or if you want to have it done a day before using it.

Cut small pieces of the dough and flour the table. Knead the dough again with an
inside-out movement. Stretch the dough, grab a corner and fold it toward the center,
take another corner and to fold well again. Let stand wrapped in a cloth until it doubles
its volume.

Preheat the oven at 220 C for 10 minutes. Put the dough onto a tin and introduce
it in the oven.
The time of baking depends on the size of the dough , a loaf of bread of 400-500 grs
will take about 45-50 min utes.
