Cold meals can be made more interesting too with juices. Try a moulded
salad for a special occasion.
Cheese and Tomato Aspic
USING JUICE SEPARATOR Juice the tomatoes, onion and lemon
1 lb ripe red tomatoes and make up to 1 pint with water.
½ small onion Dissolve gelatine in a little water and
¼ lemon add juice.
½ tsp salt Blend cheese, salt and chopped greens
3 level dsp gelatine then add juice mixture stirring to a
½ lb cream cheese smooth consistency.
2 tbsp chopped green pepper Pour into a mould and chill until solid.
or parsley Turn out on to crisp lettuce leaves and
serve with mayonnaise.
Moulded Cucumber Salad
USING JUICE SEPARATOR Juice cucumber, orange, lemon, onion
½ cucumber and parsley and make up to ½ pint with
1 orange water if necessary. Add salt. Dissolve
½ lemon gelatine in a little water. Stir into juice
½ small onion and add 1½ cups mixed prepared
2 sprigs parsley vegetables as suggested.
1 tsp salt Pour into a ring mould and leave to set.
1 level dsp gelatine Serve with cold meat on a bed of crisp
2 tbsp hot water lettuce.
