STANDARD RECIPE
NAME OF DISHES : FRENCH FRIES POTATOES
YIELD : 10 PORTIONS
NO QTY UNIT INGREDIENTS EXPLANATION
1. 1 KG POTATOES Batonet
2. To taste SALT
3 1 Ltr Vegetable Oil For Frying
Procedures:
1. Peel and washed potato
2. Cut into 1 cm thick and 4 cm long
3. Wash well in cold water
4. Dry well on a tray in a cloth
5. Blanch in a frying basket without coloring in wok at 160 degree Celcius
6. Drain off and place on a grease proof paper on a tray until required
7. Fry in a hot deep fat fryer, 180 degree Celcius until crisp and golden brown
8. Drain well in the basket
9. Season with salt in a bowl for easy dressing
10. Served hot immediately as long as potato hot and crisp.
Note:
If the French Fries are not used immediately, can be kept in deep freeze, and should be fries
directly from frozen without thawing
