Murphy’s Casserole ~ Lesley Smith
(serves 3)
Ingredients:
2 large potatoes
2 large leeks
1 tin corned beef
1 tin condensed chicken soup (undiluted)
Method:
à wash and thinly slice potatoes and leeks
à cut corned beef into cubes – not too big
à in a deep, greased casserole dish, put layer of potatoes
followed by layer of leeks and corned beef
à pour over half the tin of soup then layer in reverse to finish
with a layer of potato
à pour over rest of soup using the back of a spoon to spread
across the top
à cook for 1 - 1½ hours at 180 c
The original recipe used ham but, for economic reasons, my moth-
er used corned beef which was cheap at that time!
(Any condensed soup of your choice can be used)
Always make a guest feel at home,
even if you wish they were!
