Goats Cheese Tortellini
with a red pepper sauce
Making the pasta dough
Preparation tasks (approx. 10 minutes)
1. 1. Sift the flour onto the chopping board. Then create a well INGREDIENTS NEEDED:
in the centre.
• 230g '00' flour,
2. Crack the eggs into a bowl using 2 yolks to one whole egg • 130g eggs,
until you have the weight required (130g). If you go over
slightly don’t worry. • salt and a little pepper
EQUIPMENT NEEDED:
3. Beat the eggs until thoroughly combined and then pour into
the well in the flour. • Chopping board and a fork
4. Using a fork slowly swirl the mixture gradually bringing more
flour to the mixture. Continue until all of the flour and egg are
combined. As the mixture thickens you may struggle to
combine it fully with the fork in which case it may be easier to
finish combining the mix using your hands.
5. To ensure if it combined evenly knead the dough for
2 minutes this will also activate the starch, if the dough feels
too dry add a splash of water.
6. Wrap in cling film and place in the fridge for at least
20 minutes while you make the goat’s cheese filling.
