Goats Cheese Tortellini

                                              with a red pepper sauce

                                            Fill and form the Tortellini
                                            Preparation tasks (approx. 10 minutes)

          1. Set up your pasta machine or rolling pin and board.               INGREDIENTS NEEDED:

          2. Remove the dough from the fridge and cut in half. Dust            •   Goats cheese log,
             lightly with flour and then put the dough through the pasta
             machine on the widest setting 4 times folding the dough in        •   50ml double cream,
             half each time. This helps activate the dough and improve

          3. Now, continue to pass the pasta through the machine               •   salt and pepper
             reducing the setting after each time until you have reached
             the thin-nest setting. The dough will get increasingly thin and   EQUIPMENT NEEDED:
             long so make sure you have enough work space to lie it on.        •   Sharp knife,
             As it gets longer and thinner it may be easier for you to cut
             the pasta in half to make it more manageable.                     •   electric whisk or wooden spoon

          4. Once passed through the last setting place the pasta sheet        •   mixing bowl
             on the side and using a sharp knife cut the pasta into squares
             about 25mm in length and width

          5. Get a bowl of water ready to assist you in forming the tortellini.
