Sharing Steak

                        with macaroni cheese, creamed spinach & peppercorn sauce

                                           Make the peppercorn sauce
                                            Preparation tasks (approx. 10 minutes)

          1. Boil the kettle and in a jug pour 200ml of boiling water and      INGREDIENTS NEEDED:
             then add the pot of green peppercorns.                            •   1 shallot

          2. Finely dice the shallot and add to a frying pan with about a      •   pot of green peppercorns
             teaspoon of olive oil in. Sweat the shallot over a medium heat
             until it is translucent.                                          •   100ml cream

          3. Once translucent, add a tablespoon of Worcestershire sauce        •   Worcestershire sauce,
             and stir to combine.
                                                                               •   200ml boiling water
          4. If adding brandy add immediately after the Worcestershire
             sauce and then flambé until the alcohol has gone.                 •   25ml brandy (optional)

          5. Once the Worcestershire sauce has been in the pan for about
             15 seconds ( and if flambéing the flames have gone out)           EQUIPMENT NEEDED:
             immediately add the 200ml mixture of peppercorns and              •   1 sharp knife
             water and turn the heat to high.
                                                                               •   frying pan
          6. Reduce the liquid in the pan by about 1⁄3 and then add 100ml
             double cream and reduce again by about 1⁄4.                       •   1 jug

          7. Pour into a jug and refrigerate until cooking.
