Breakfast




























       Easy Breakfast Muffins









        INGREDIENTS
        •     cups (   . g) of rolled oats                                        Makes 10 muffins
        ground into flour
        •   medium-large ripe banana                                              147 calories per muffin
        •   cup (  g) coconut sugar (or
        other dry sugar)                                                          Macros per muffin :
        •   tbsp pumpkin seeds, roughly                                           3g Protein 26g Carbs 4g Fat
        chopped
        •   tbsp sunflower seeds, roughly                   METHOD
        chopped                                            Preheat oven to     F and prepare a muffin tin
        •   cup (  . g) raisins
        •   tbsp candied ginger, chopped                    . Prepare fla  egg by mi ing fla  seeds and water in
        • ¼ cup (60g) chocolate chips                      a small bowl. Set aside and let sit for   minutes.
                                                            . In a medium sized mi ing bowl, mash banana and

        tbsp water                                         then add coconut sugar, pumpkin seeds, sunflower
                                                           seeds, raisins, candied ginger, chocolate chips,
        •   tsp cinnamon
        •   tsp apple cider vinegar                        cinnamon, vanilla e tract and salt and mi  well.
        •   tsp baking soda                                 . Grind rolled oats into fine oat flour with a high
                                                           speed blender. Add to batter and stir well.
        •   tsp baking powder
        •   tsp vanilla e tract                             . Add fla  egg, baking soda, baking powder and
                                                           apple cider vinegar to batter and mi  well.
        • ¼ tsp salt
                                                            . Put a spoon full of batter in each muffin tin (batter
                                                           makes appro .  -   muffins) and bake for
                                                           minutes. Let cool before serving!
