        METHOD

         . Add all ingredients for the rice (e cept the salt) to a medium sized saucepan. Bring to a simmer
        and stir occasionally, making sure the rice doesn t burn. It will take appro .    minutes to cook. Once
        the rice is cooked, remove from heat, salt to taste and set aside.

         . Add the chopped garlic and onion to a preheated frying pan with the olive oil. Saute until onions
        are soft and translucent. This will take appro .  -  minutes on medium heat.


         . Add the pinto beans along with black pepper and salt to the garlic and onion mi . Cook for appro .
          minutes or until beans are heated through. Remove from heat.


         . Heat your tortillas in the microwave for appro .    seconds. This will help them fold better. Divide
        the rice and beans evenly between the tortillas making sure to place the rice on the bottom and
        beans on top.


         . Evenly distribute the rest of the topping ingredients onto each burrito. Fold the burritos by folding
        the ends of the tortillas over the mi ture and folding the tortilla over itself, keeping the ends tucked
        in.


         . After you are done rolling the burritos, you may want to sear the fold on the bottom and ends of
        the burrito by placing the folds on a hot dry frying pan (using medium heat). This helps seal the
        burrito.
