1½ cups (175 g) self-rising flour
2 large eggs
½ teaspoon salt
½ teaspoon baking powder
½ cup (125 ml) coconut milk
½ cup (125 ml) club soda
Sweetened condensed milk for drizzling (optional)
1 Heat the oil in a large wok or fryer over medium high until the oil reaches 375°F
(190°C). Alternatively, if you don’t have a cooking thermometer, you can stick a
chopstick in the oil and if bubbles appear then the oil is hot enough.
2 Cut the peeled bananas in half. Using the palm of your hand, gently press down on
each of the banana halves to slightly flatten it. Set the bananas aside.
3 Mix together the flour, eggs, salt, baking powder, coconut milk, and club soda in a
large mixing bowl until a smooth consistency is achieved.
4 Coat the bananas thoroughly in the batter and gently slip them one at a time into the
hot oil. Fry a few bananas at a time and don’t overcrowd them or they will stick
together. Once a banana has turned golden brown on one side (after about 1 minute or
so) gently flip it over and cook for about another minute until the other side is golden.
Drain on paper towels and serve warm as is or drizzled with condensed milk.
