Lemon Chiffon Pie

                                    Ingredients:

                                    1 (14 oz) can sweetened condensed milk
                                    ⅓ cup reconstituted lemon juice
                                    2 to 3 teaspoons grated lemon rind
                                    few drops yellow food coloring
                                    3 egg whites
                                    ¼ teaspoon cream of tartar
                                    1 graham cracker pie crust
                                    whipped cream or topping, optional

                                    Directions:

                                    In a medium bowl, combine sweetened condensed
                                    milk, lemon juice, 1 tsp lemon rind, and food
                                    coloring. Mix well. In a small bowl, beat egg whites
                                    with cream of tartar until stiff but not dry. Gently
                                    fold into sweetened condensed milk mixture. Pour
                                    into crust. Chill 3 hours. If desired, garnish with
                                    whipped topping and remaining lemon rind before
                                    serving. Refrigerate leftovers.

                                                   Lemon Cookie Bars

                                    Ingredients:

                                    1 box yellow cake mix
                                    ⅓ cup sugar
                                    2 eggs
                                    1 (8 oz) pkg cream cheese
                                    1 tsp lemon juice
                                    ⅓ cup oil

                                    Mix cake with 1 egg and oil until it crumbles.
                                    Reserve 1 cup of mixture. Pat the rest of mixture in
                                    an ungreased cake pan. Bake 15 minutes at 350°F.

                                    Cream sugar, lemon juice, cream cheese and 1 egg
                                    until light and smooth. Spread over baked mixture,
                                    then sprinkle with reserved cake mixture. Bake
                                    another 15 minutes. Cool and cut into bars.
