Merrifield Apple Cake

Ingredients:
3 cups all-purpose flour
2 cups sugar
1 cup salad oil
3 eggs
1 tsp baking soda
1 tsp salt
2 tsp vanilla extract
3 cups diced, peeled cooking apples (about 3
medium apples)
1 cup chopped walnuts
½ cup chopped dark seedless raisins
confectioner's sugar
Preheat oven to 325°F. Grease well and flour 2 8"
square cake pans or one 13x9 pan. Into large bowl,
measure flour and next 6 ingredients; with mixer at
low speed, beat until well mixed, constantly
scraping bowl with rubber spatula. Beat 3 minutes
more, occasionally scraping bowl. With spoon or
rubber spatula, stir in apples, nuts and raisins;
spread batter evenly into pans. Bake 1 hour or until
cake is golden brown. Cool cake pans on wire racks
10 minutes; remove from pans and cool completely
on wire racks. Wrap and refrigerate.
To serve: Place a paper doily over cake surface and
sprinkle with confectioners' sugar; remove doily.
Makes 18 servings.
