Mexican Fruit Cake

                                    Ingredients:

                                    2 cups sugar
                                    2 cups flour
                                    2 tsp baking soda
                                    2 eggs, slightly beaten
                                    1 (16 oz) can crushed pineapple, undrained

                                    Mix all ingredients together. Add 1 cup chopped
                                    pecans. Bake in 2 or 3 layers, at 350°F until
                                    toothpick comes out clean.

                                    Cream Cheese Frosting:
                                    1 (8 oz) pkg cream cheese, softened
                                    1 stick butter, softened
                                    1 tsp vanilla
                                    2 or 3 cups powdered sugar

                                    Bake in greased and floured Bundt or tube pan at
                                    350 °F for 1 hour 10 minutes or until test done with
                                    toothpick.

                                    Glaze with following: 1½ cups peach preserves, 1
                                    cup powdered sugar, sifted, 1 Tbsp lemon juice or
                                    lime juice. Mix well and pour over cake.
