Buttermilk

                                   Custard pie



                                         Ingredients




               1 cup sugar
               Pinch of salt
               3 tbsp flour
               3 eggs separated
               2 cups buttermilk
               2 tsp vanilla extract
               1 tsp lemon zest
               Unbaked 10 inch pie shell


                                         Lagniappe


               Combine the sugar, salt and flour and stir to blend.  Beat the egg yolks
               slightly and add to the sugar mixture along with the buttermilk, melted
               butter, vanilla and lemon zest.  Blend thoroughly.

               In another bowl beat the egg whites until they are stiff then fold them gently
               into the custard mixture.  Pour it all in an unbaked pie crust and bake at 425
               for 45 to 50 minutes or until a knife inserted into the pie comes out clean.
