Tomato Feta Frittata Servings: 3 25
Whisk together: 6 whole eggs, 1/2 cup of chopped carrots, 1/2 cup of asparagus, 1/2 cup of
diced red pepper, 1/2 cup of spinach, 1-1/2 tsps of sea salt, 1 tbsp of fresh chopped parsley,
1/2 cup of chopped low-fat feta cheese. Place mixture in a medium size square baking pan
and top with sliced baby tomatoes and place in the oven at 350 for about 35-40 mins.
