Sweet Potato Breakfast Pie 26

Directions: First layer: mix together: 1 cup of baked sweet potato with 1/2 a cup of low-fat shredded
cheese, 1 tsp of garlic powder, 1 tsp of sea salt & 1 tbsp of olive oil. Second layer: Cover with steamed
spinach. Third layer: add thinly sliced zucchini. Fourth layer: add extra lean ground beef or meat of
choice. Fifth layer: same as first layer. Place all layers on top of each other in a rectangular baking pan
and cook in the oven at 450 for about 30-40 mins. (Makes about 4 servings)
