Cooking for Healing
Mushroom and Spinach
Frittata
Winter is a time where vitamin D deficiencies are the highest. This can result in Seasonal
Affective Disorder as the sun hides behind winter clouds. Seasonal Affective Disorder can
cause anxiety and depression. This recipe is full of vitamin D as we begin transitioning
from winter into spring!
Ingredients Beat the eggs in a bowl, and add the mushroom
and spinach, milk, and optional Parmesan.
2 tablespoons olive oil
10 ounces sliced mushrooms Heat the remaining oil in the skilllet and
