Fish in a Pot.
In the old days the fishermen made this dish when they were at sea. They put chopped vegetables
ond fish in layers in a pot and added water, butter, salt and pepper.
Then the pot was put on the hot boat engine to boil. Hours later dinner was ready.
This is a modern version made in the school kitchen for 4-5 persons:
400 g cod
2 leeks
2 carrots
2 potatoes
1 onion
1/2 tin of chopped tomatoes
salt, peper
75 g butter
2 dl cream
1) Peel, rinse and chop the vegetables in thin pieces. Cut the cod in pieces of 3 cm.
2) Melt the butter in a pot and saute` the vegetables. Take half the vegetables out of the pot and
put the cod in.
3) Sprinkle with salt and pepper and add the tomatoes. Put the vegetables back in the pot.
4) Add cream and leave the dish to boil for about 30 min over low heat under a lid.
