Prepping
Preview Day
for

During the school year, the Culinary Arts students are
taught various skills used in recipes that are incorporated into
the Preview Day lunch menus. For instance, they learn a lot of
knife skills, so veggie sticks and dip are usually served for the
appetizer. This allows the students to practice and show their knife
skills to the visitors. Parts of the curriculum are incorporated into
the menus too, like learning about international cuisine. This new
knowledge may show up at the lunch as tacos or guacamole!
The students prepare all week long for the Preview Day on
Friday. They get a head start on the prep work and also set up the
tables so that by Friday morning they only have an assembly line
of plating left to do.
It is the staff’s hope that the students grow comfortable with
feeding a crowd of people simultaneously, much as they would in a
restaurant. They gain knowledge of the amount of prep involved in
an event, and learn of the fast pace that is demanded from them in
order to get a meal out on time.
During lunch, the students share about what they’ve learned
in the program. Visitors leave with a deeper understanding of
what our Culinary Arts program offers after their delicious and
informative meal.
