Atmosphere

Overview
The atmosphere that you create in your restaurant impacts every single guest. A consistently great atmosphere motivates
guests to visit more often and encourages them to stay longer. In other words, it increases guest count and guest check
averages (GCA).
There are 3 areas of atmosphere for you to manage on each shift:
1. Lighting
2. Music, televisions and volume
3. Temperature
Lighting
Each location typically has 4 or 5 lighting levels that should be clearly marked on the lighting controls. Any changes to
these pre-set lighting levels should be approved by your Regional Manager.
Day Part Time Lighting
Pre-open 100% brightness so you can ensure a clean restaurant
Daytime Open – 3pm Bright
Happy hour 3 – 6pm Dimmed
Evening 6 – 9pm Further dimmed
Late night 9pm – close Further dimmed
*Some locations use different settings than those described above. Please use the settings that were approved by your
Regional Manager for your location.
We keep our blinds fully open all day and night. The exception is when the sun is blinding a guest; should this happen,
you can temporarily lower the appropriate blind to block the sun.
Keep flashlights at the host stand in case you notice a guest is struggling to read our menu due to dimmed lights.
Music
Music injects energy into every room and it’s a crucial part of the guest experience. We put real time and attention to our
playlists and always welcome your feedback.
If you find a song is inappropriate (or even just less desirable), please skip to the next song on your PCM playlist, and
don’t forget to tell us about the poor song! Further, if you would like a song added to any playlist, please share!
