3. Cook veggies until tender. Add garlic and cook for about 1 more
minute.
4. Add all remaining ingredients EXCEPT shrimp. Simmer until
slightly thickened, about 20 minutes.
5. Add shrimp and cook until shrimp is cooked. Stir in cooked bacon.
6. Serve over rice and garnish with parsley.
