service operations. The term comes from the French word

early as the mid- 1700s to describe public places that offered
soup and bread.
Commercial restaurants started in their image of today in
1965 in Paris, France – before that time public food service
were only offered in inns and catering operations.
Restaurants in this segment range from full service to
self–service. These operations differ in their type of service,
type of food served, décor and price. Commercial food service
operations work mainly to provide food service and to make
profit. But it is not easy to set a certain classification for the
