      Independent restaurants are single – unit operations; one –

independent restaurants have advantages as, the flexibility, the
owners motivations and the owners closeness to the operation.
Independent ownership units are flexible and free to develop
their selves to meet changes in customers tastes.

      An independent operation is owned by an owner or
owners who have one or more properties that have no chain
relationship – menus may not be identical among properties,
food purchase specification may differ, operating procedures
are varied, etc. Entrepreneurs who can stop a market whose
