                       Service Industry

   A very good example of this is food operations of the airline
   industry.
    Fully restricted menu configuration: the fully restricted
   menu configuration is unique one; fish and chips restaurants
   in England are best examples for commercial food
   operations using this technique. Health care, prisons and
   military food units are other institutional foodservice
   operations that use this menu configuration.

1-5.3 Classification According to the Average Check
      Check-average is the amount of money spend per head,

and is calculated by dividing the total sales per departmentally
on the number of people or covers served.

      Restaurants classified by check-average to different
categories namely; low average check outlets, moderate
average check outlets and high-average check outlets.

    Low average check outlets :
1- Coffee shops: these outlets operate on 24 hours basis to offer
fast and simple food service. Convenience is a major concern
here, service should be swift and prices should maintain the
lowest profit margins possible.
