      Furthermore, independent restaurants could be
categorized into three segments (as illustrated in table 1):

   1- Quick service: where prices are low, service is limited,
   delivery is relatively fast.
   2- Midscale: offer limited or full table service. The
   atmosphere is faster than in upscale and slower than in
   QSR's.
   3- Upscale: provide full menu, full table service, good food
   made with fresh ingredients, and personalized service.
