Quality and Food Safety Management in Food
                       Service Industry

      Quality is everything that an organization does, in the
eyes of its customers, will encourage them to regard that
organization as one of the best.

      Quality divided into three meanings:
a) Quality of design: product designs conform to customer
needs.
b) Quality of conformance: products manufactured conform to
product-designs (the targeted design specifications).
c) Quality of performance: products manufactured conform to
customer needs by performing in the field.

      Quality has been defined as "conformance to requirement;
zero defects and fitness for purpose at the right price". Also,
quality may be defined as" conformance to standards; fitness
for use and what guests say it is ".

      Quality is a comparison between expectations and
performance. “quality is the degree of excellence in which a
product or service can be ranked on the basis of selected
features or characteristics. It is the customers who determine
this ranking and who define quality in terms of appearance,
performance, availability, flexibility and reliability. Product
quality determines the organization's reputation”.
