influence the guests' perception of the quality of service and
product that they receive. Quality management cannot be a
whim or fad; it must be a long-term, planned, monitored and
measured activity which has the support of all connected with
the operation- managers, supervisors, employees, suppliers and
most important of all guests.

2-1 Quality Definitions

      Quality is neither a topic of recent interest nor a fashion.
It is, and has always been an area-of interest, essential for a
firm's and to a nation's competitiveness.

      A wide variety of approaches to defining quality are
evident. For example, quality as excellence; meeting or
exceeding customer's expectations and the consistent delivery
of service and products based on standards established by
individual properties or chains.

      Quality defined as “a condition whose presence or
absence is readily recognized yet which remains stubbornly
resistant to any attempts at definition”.
