Pineapple Glazed Yams

                 4                     yams -- large
                 4               tbsp  butter
                    1/2             c  brown sugar
                 1                tsp  salt
                    1/4             c  Triple Sec
                 1                  c  crushed pineapple in juice
                 2                tsp  cornstarch
                 2               tbsp  water

               Peel yams and slice thickly.  Boil them in salted water for about 10
               minutes.

               Meanwhile, melt butter in a large, heavy skillet.  Stir in brown sugar,
               salt, Triple Sec and pineapple.  Dissolve cornstarch in water and stir
               into the pineapple mixture.  When the mixture is well blended and
               thickened, add the drained yams and turn them over untill all the slices
               are coated evenly.  Continue cooking over medium heat until the yams are
               quite tender and well-glazed.

               Serve hot.
