Welsh Cakes ~ Anne Squires

        Welsh cakes can be made in a frying pan but I have my mother's
        bakestone which helps me still to feel close to her. I also have fond
        memories of my aunt making them over the open fire in the kitchen
        of a Welsh mining cottage. The smell was delicious!

        Ingredients:
        8 oz self-raising flour (approx 250 g in new
        money)
        1 teaspoon baking powder
        4 oz / 125 g margarine
        3 oz / 90 g Fairtrade sugar

        3 oz / 90 g Fairtrade raisins
        ½ teaspoon Fairtrade mixed spice
        1 egg beaten
        1 or 2 tablespoons milk if needed                                    Starters | Soups | Main Meals | Desserts | Cakes | Biscuits, etc

        Method:
        à     sift flour and baking powder into bowl. Rub in margarine until
              as fine as breadcrumbs
        à     add sugar, raisins and spice. Mix together

        à     mix to a soft dough with the egg. You may need a small
              amount of milk

        à     roll out on floured board till approx ¼ inch Use 3" round
              cutter to cut out approx 12 cakes

        à     grease frying pan or bakestone and heat it. When it is hot
              cook the cakes in batches until they are golden brown on
              each side, approx 3 minutes each side
        à     cool on a wire rack. Some like them buttered or with icing
              sugar sprinkled over, but we prefer them warm and just as
              they are
