Banana Bread ~ Lynn Neads
Just Cake - a.k.a. Banana Bread but not in the Manse because
Alex won’t eat it if he thinks it has fruit in it.
Ingredients:
3 or 4 bananas - the riper the better (roughly mashed)
250 g caster sugar
125 g unsalted butter
2 medium eggs
250 g plain flour
2 teaspoons baking powder
Method:
à heat oven to 190 c (170 c fan)
à cream bananas and sugar together
à add butter and mix
à beat in eggs - one at a time with one spoon of flour Starters | Soups | Main Meals | Desserts | Cakes | Biscuits, etc
à fold in the rest of sifted flour and baking powder - unless you
decide to let your toddler help - then just hope they manage
to keep some in the bowl
à spoon mixture into lined loaf tin and bake for 40 minutes or
until skewer comes out clean
