Boiled Cake ~ Ann Gould
Ingredients:
¼ lb of margarine
1 cup of sugar
1 lb mixed fruit
1 cup of water
2 eggs
2 cups self raising flour and mixed spice.
Method:
à put margarine, sugar, fruit and water into a pan and bring to
the boil
à simmer for five minutes and allow to cool
à add beaten eggs and flour, mix well
à divide into 2 x 1 lb loaf tins
à cook for one and half to two hours on Gas mark 3 on lower Starters | Soups | Main Meals | Desserts | Cakes | Biscuits, etc
