Heavy Cake ~ Rosemary Alexander
Ingredients:
450 g / 1 lb self raising flour
230 g / ½ lb margarine
230 g / ½ lb sugar
230 g / ½ lb currants
Method:
à rub together the flour, sugar and margarine until the mixture
looks like breadcrumbs then add the currants and mix
together with water
à flour an oven tray 12” x 12”
à pour mixture onto the tray and roll out, sprinkle with sugar,
cover the tray
à bake in the oven for 20 minutes or longer on 180 c or
gas mark 7
à test the mixture by putting in a knife, if the knife comes out
clean the cake is done
à when cool cut into squares
Cooking is at once child's play
and adult joy.
And cooking done with care is
an act of love.
