                           Carrot Cake ~ Martyn Neads

           I was given this recipe by a friend many years ago. It is still on the
           same piece of paper, which is now somewhat dog-eared, creased,
           and stained. However, the recipe is still clear, and it is one of my
           favourite cakes to make. Thus far (tempting fate) it has always
           turned out well.

           I usually add more cinnamon and nutmeg than the recipe says, but
           that is obviously the maker’s choice.

           Ingredients:
           180 ml vegetable oil
           175 g soft brown sugar
           3 eggs, beaten
           150 g plain flour, sieved
           1¼ teaspoon baking powder
           1¼ teaspoon bicarbonate of soda
           1 teaspoon salt
           1 teaspoon ground cinnamon
           ¼ teaspoon ground nutmeg
           225 g grated carrots
           100 g raisins

           Method
           à     pre-heat oven to 180 c (fan oven 160 c), gas mark 4
           à     mix oil and sugar, and add beaten eggs
                  add flour, baking powder, bicarbonate of soda, salt,
                  cinnamon, and nutmeg
           à     stir in carrots and raisins
           à     pour into an 8” tin and bake for 50 minutes
