                          Scottish Tea Bread ~ Gill Mayo


           Gill remembers when on holiday in Scotland, several years ago,
           they had Scottish Tea Bread. They were in a small family run tea
           room and the bread was made on the premises. Although this isn't
           the exact recipe (which was a secret ) the lady gave Gill a rough
           idea of it.
           The bread is lovely spread with butter and keeps well for about five
           days but not that long in Gill's house!

           Ingredients:
           170 g sultanas
           170 g raisins
           orange zest
           2 eggs lightly beaten
           250 g self raising flour
           200 g light brown sugar
           1 teaspoon mixed spice
           300 ml strong black tea

           Method:
           à     mix fruit and orange zest in a large bowl, pour over hot tea
           à     cover and leave overnight
           à     grease and line a 2 lb loaf tin
           à     heat oven 180 c / 160 c fan / gas 4
           à     add the rest of the ingredients to the fruit and mix well
           à     put mixture in prepared tin, bake for one and a quarter hours
           à     test with a skewer (Gill recommends testing after an hour)
           à     when baked leave in the tin for 10 mins then turn out onto a
                 rack to cool
