Servings: 4
Directions: In a food processor, blend together
the following ingredients: for the cookie batter:
1 cup coconut flour, 1/2 cup cashews, 1/3 cup
monk fruit/baking stevia, 1/3 cup raw cacao
powder, about 1/2 cup of almond milk. Form
the batter into cookies and whip together the
middle layer. Blend together: 1/2 cup almond
flour, 4 scoops protein powder, 4 tbsps raw
cacao powder, 4 tbsps coconut oil, 40g dark
chocolate, 1/3 cup monk fruit/baking stevia, 2
tbsps. ground flaxseed, about 1/3 cup almond 151
milk. Place the batter in between two cookies
and top cookies with cacao nibs.
