Snack

        2 celery sticks & 1 tablespoon of peanut butter

        Dinner: spinach, mushroom & ricotta cannelloni

        Ingredients


        3-4 eggplants (aubergines), cut lengthwise into thick slices

        1½  cups  low  fat  Ricotta  cheese  (remove  this  ingredient  if  you  are  a  strict
        vegan and replace with tofu, raw almond cheese, cashew brie or aquafaba –
        if you are not averse to eating vegan cheeses made with potato, then you
        may also use this as a substitute)


        2 cups chopped spinach

        2 tablespoons olive oil

        1 cup chopped mushrooms

        2 egg yolks (remove this ingredient if you are a strict vegan and replace with
        mashed banana, soy, tofu or coconut yoghurt)

        1 cup chopped basil leaves


        3 medium tomatoes

        1 teaspoon rosemary

        ½ cup chopped parsley

        1 teaspoon granulated sugar (replace with raw honey if strict vegan)

        2 teaspoons crushed garlic
