           20. Estimation of Free Fatty

                 Acid in Oil and Tallow




           SCOPE
           To estimate the free fatty acid (FFA) in oil and tallow.


           PRINCIPLE
           Most lipids undergo hydrolysis liberating free fatty acid
           resulting in hydrolytic rancidity. A known amount of the
           sample is dissolved in ethyl alcohol and titrated against
           standard  sodium  hydroxide  solution  using                 Picture-3                Picture-4
           Phenolphthalein  as  indicator.  The  result  gives  the
           extent of hydrolytic rancidity that has taken place in
           given sample.


           Apparatus
           FAnalytical  Balance,  1  mg  /  0.1  mg  accuracy
              (Picture-1)
           FErlenmeyer flask, 250 ml (Picture-2)

           FGraduated Cylinder, 25 ml (Picture-3)

           FGraduated pipette, 10 ml (Picture-4)
           FBurette, 10 ml (Picture-5)
                                                                REAGENTS
                                                                F0.1N  Sodium  Hydroxide:  4gm  of  sodium
                                                                   hydroxide AR grade in one litre of water.

                                                                FPhenolphthalein indicator.

                                                                FAbsolute alcohol.
