REVIEW THE FOLLOWING
FRESH INGREDIENTS >>
• Explain the significance of “fresh” vs. canned or frozen.
• Describe ingredients that are sourced seasonally for quality and freshness. What’s in season
now?
• Review the Ingredient Background sheets for our proteins and discuss how our ingredients
are sourced and handled.
• Inform the MIT that they should check the blog on UrbanPlates.com regularly for important
information about menu items and ingredients.
• Take a few minutes to go to the blog and review some of the postings.
